A lot of excellent custom work - we have welders, woodworkers, industrial designers, mechanics and architects in the family and they have all graciously contributed their expertise to this family project over the past 10 years we have owned and operated the vehicle.
* 8’ Custom French Door Style Service Window - allows for eye to eye level service from either of the single 4’ sides or both can be opened for a full 8’ service space experience. The hardware for the windows were all sourced from a vintage marketplace in Mexico City. They lock from the inside and can be secured to the body of the truck
via leather strap loops when opened for service.
* 8’ Custom Steel & Wood Deck - allows customers to step up off the street and join you in an elevated service experience. The deck is welded onto the body of the truck and can fold up and secure when on the move. The removable steel legs can each be adjusted in height at the point of attachment and as well micro adjustments at the bottom via screwed on steel foot plates - this is awesome for all kinds of events with all kinds of ground / pavement / grass / gravel
* 8’ Custom Double Dome Insulated Skylight - allows for lots of light and height inside the workspace of the truck. It has always been the ‘wow factor’ that customers have loved and provides interior light to set your business apart from the competition by showing off your products at a distance. For nighttime events, there are LED strip lights installed that literally allows the truck to glow.
* 8’ Custom White Italian Carrara Marble Countertop - rolled edge slab spanning two full stainless steel worktops. Fantastic visual from the view at the window for customers and can be sued to display products or serve food items with elegance and style. It is easy to clean and extremely durable.
* Custom Oaxacan Wool Seat Covers - hand-crafted backs using naturally dyed 100% wool rugs sourced from Oaxaca and include real sheep skins at the seat for unique aesthetic value and practical comfort.

Also included is a brand new hot water heater for the hand sink which connects to the two large water tanks installed under the body facilitating both fresh and gray water. Easy access fill and dump outlets are found at the back of the truck and the related hoses are also included.
The countertops are all commercial grade stainless steel and we are including a full set of non-slip rubber floor mats.
Two closet cabinets have been installed, great for storage and house the electrical control board & deep cycle battery for the custom electrical system (see notes below).
------ Incredibly Flexible Custom Electrical System ------
The interior electrical system is designed to function as an RV, and runs through a comprehensive RV panel. This is ideal for a number of reasons, including the option to power just half the unit depending upon available electricity.
The system can connect to both the residential and commercial power grids, or it can be powered with the included generator. The system also includes a deep-cycle battery (which charges automatically when connected to power) for off-grid use of the interior dome lights, ventilator fan, pump for the handwashing sink, hot water heater, wall outlets and the CO2 detector.
A long 220V RV cable connects to the back of the truck and ends with an RV “cheater box”adapter. This “cheater box” allows for full or partial electrical connectivity as desired for operation in an increased variety of conditions. The “cheater box” splits the single 220V cable input into two typical 120V inputs, each of which powers half of the electrical panel.
In this way, one typical 120V circuit can be used to power a single half of the electrical panel, or two separate 120V circuits can be used to power both halves of the panel simultaneously.
The system is laid out so that outlets on each side of the truck are staggered and run through either the top half or bottom half of the panel, this offers more convenient connectivity spread throughout the truck should only one half of the panel be electrified.
To power the entire system using the generator simply remove the cheater box and use the additional included adapter to
connect to the 220V RV cable.
* Important note: To use both halves simultaneously, each half must be powered by a different electrical circuit and neither circuit can contain a GFCI outlet. While the use of only one circuit to power one half of the truck is straightforward, and does not depend on the absence of GFCI.
This system has served us well at commercial kitchens, restaurants, farmers markets, festivals, and even at private residential parties etc... we are sure you will appreciate the versatility.

* 2015 - 2020 / City of Boulder licensed for operation as a Retail Food Establishment Mobile Unit and passed all relevant inspections.
* 2015 - 2020 / Boulder Fire Department approved for operation as a Retail Food Establishment Mobile Unit with propane.
* 2018 - 2019 / City of Denver approved for operation as a Retail Food Establishment Mobile Unit and passed all relevant inspections.
* 2018 - 2019 / City of Denver Fire Department approved for operation as a Mobile Retail Food Vendor with propane.
* Currently registered in Colorado with clean emissions test certificate
Over the years we have experimented with different set ups and can tell you that this is a SUPER FLEXIBLE option for all kinds of businesses. Straight away this could be a food truck, mobile cafe, bar for events, boutique etc. We have even drafted several designs of layouts that would make this an awesome tiny home or Air BnB for extra income.
